Vegan Tofu Soba

Tofu is one of those plant based foods that oh so tasty and filled with good protein; but a word of caution, tofu should be eaten in moderation. It is not something that you want to eat on a daily basis. And if you do, keep it in very small portions. For this dish we are going to enjoy a good dose of this marinated tofu. The marinade is so good and will make the plain tasting tofu come to life. Paired all together with the soba noodles and sautéed vegetables and this is completely healthy, satisfying and stress free meal.


Vegan Zucchini Avocado Pasta

This recipe is really simple and quick to make, but you would need a food processor/blender to make it. If you don't have one, you should strongly consider getting one. This is one of the best avocado pasta I've made and you can do so much with it and make so many variations at the same time and you can always substitute the zucchini with any pasta of your choice.

Vegan Vietnamese Pho

Not long ago I had a delicious vegan pho in a Vietnamese restaurant in New York City. The broth was heady with sweet spices and, like the traditional meaty soup, was served with rice noodles, bean sprouts and fresh herbs.
