These are not your every day breakfast waffles. Add ice-cream or any toppings you can think of and they can be eaten as a full blown dessert. What would you do with these decadent thick belgian waffles?
Serves: Are you seriously going to share?
Ingredients
- 1 cup all-purpose flour
- 1/3 cup unsweetened cocoa powder
- 1/2 tablespoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1 cup non-dairy milk (I use almond milk here to add to the nutty taste)
- 2 tablespoons water
- 2 tablespoons + 2 teaspoons vegetable oil
- 1/3 cup sugar
- 1 teaspoon vanilla extract
- 1/4 cup vegan semisweet chocolate chips
- 1/4 cup dried cherries, chopped*
- 1/3 walnuts, chopped *
- non-stick cooking spray
- *These are option. You could include them in the batter or as toppings with vegan ice-cream. Hazelnuts or macadamia nuts would be crazy good too!
Instructions
- Mix flour and salt together in a large bowl.
- In a separate bowl, whisk milk water, oil, sugar and vanilla.
- Pour the wet ingredients into the dry and mix together. If it turns out too thick, add a small amount of milk.
- Fold in chocolate chips, nuts and cherries. Do not over-mix. Batter should be a thick consistency.
- Pour into waffle maker and cook according to your waffle maker’s instructions.
- To make brownie batter sauce, reserve a bit of batter and thin it out with a few sprinkles of milk.
- Or if you prefer, eat with vegan ice-cream.
- Enjoy!
