Vegan Chocolate Brownie Waffles

These are not your every day breakfast waffles. Add ice-cream or any toppings you can think of and they can be eaten as a full blown dessert. What would you do with these decadent thick belgian waffles?

Ingredients

  • 1 cup all-purpose flour
  • 1/3 cup unsweetened cocoa powder
  • 1/2 tablespoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1 cup non-dairy milk (I use almond milk here to add to the nutty taste)
  • 2 tablespoons water
  • 2 tablespoons + 2 teaspoons vegetable oil
  • 1/3 cup sugar
  • 1 teaspoon vanilla extract
  • 1/4 cup vegan semisweet chocolate chips
  • 1/4 cup dried cherries, chopped*
  • 1/3 walnuts, chopped *
  • non-stick cooking spray
  • *These are option. You could include them in the batter or as toppings with vegan ice-cream. Hazelnuts or macadamia nuts would be crazy good too!

Instructions

  1. Mix flour and salt together in a large bowl.
  2. In a separate bowl, whisk milk water, oil, sugar and vanilla.
  3. Pour the wet ingredients into the dry and mix together. If it turns out too thick, add a small amount of milk. 
  4. Fold in chocolate chips, nuts and cherries. Do not over-mix. Batter should be a thick consistency.
  5. Pour into waffle maker and cook according to your waffle maker’s instructions. 
  6. To make brownie batter sauce, reserve a bit of batter and thin it out with a few sprinkles of milk.
  7. Or if you prefer, eat with vegan ice-cream.
